Components of the Healthy Food in Health Care Pledge

Minimize Food Waste

Food Waste

10% of hospital waste is food related waste.

Composting programs can significantly decrease disposal costs.

Food waste that ends up in landfills breaks down anaerobically, producing methane-a primary greenhouse gas.

Finished compost can be used as a soil amendment, rather than fertilizer, which requires fossil fuels for manufacture.

Service Ware

Plastic service ware produces significant waste, uses petroleum products for manufacture, and leaches toxins when heated and during breakdown.

Use of reusable service ware (ceramic, glass, metal) and alternative bio-based products can cut down on waste and pollution.

Bio-based products are made with materials such as corn, potatoes, sugar cane waste and perennial grasses and can often be composted.
